
Recipe for Red Tamales
Ingredients:
- 4 cups masa harina (corn flour)
- 3 cups chicken or vegetable broth
- 1 cup red chili sauce
- 1 cup lard or vegetable shortening
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1-2 cups shredded chicken or pork (optional)
- 30-40 dried corn husks
Instructions:
- Soak the corn husks in warm water for 30 minutes until soft.
- In a large bowl, mix masa harina, baking powder, and salt.
- Add the broth gradually, mixing until a dough forms.
- In a separate bowl, beat the lard or shortening until fluffy, then mix it into the dough.
- Stir in the red chili sauce and shredded meat, if using.
- Spread 2 tablespoons of the mixture onto the center of each soaked corn husk.
- Fold the sides of the husk over the filling, then fold up the bottom.
- Place the tamales upright in a steamer and steam for 1-1.5 hours, checking occasionally.
- Remove from heat and let cool slightly before serving.
