Recipe for Red Tamales

Instructions:

  1. Soak the corn husks in warm water for 30 minutes until soft.
  2. In a large bowl, mix masa harina, baking powder, and salt.
  3. Add the broth gradually, mixing until a dough forms.
  4. In a separate bowl, beat the lard or shortening until fluffy, then mix it into the dough.
  5. Stir in the red chili sauce and shredded meat, if using.
  6. Spread 2 tablespoons of the mixture onto the center of each soaked corn husk.
  7. Fold the sides of the husk over the filling, then fold up the bottom.
  8. Place the tamales upright in a steamer and steam for 1-1.5 hours, checking occasionally.
  9. Remove from heat and let cool slightly before serving.
